Girl Scout cookies are legendary for their catchy names and flavors, but also for their unhealthy nutrition labels. Dallas-based vegan dessert blogger at Chocolatecoveredkatie.com compares the original Samoas recipe with her vegan version of the cookies. The main difference is she doesn’t use sugar. Here is that recipe.

Materials and Ingredients

Food processor, like a blender or Vitamix

1 cup pitted dates

4 tablespoons unsweetened shredded coconut

1/8 teaspoon pure vanilla extract

1/4 teaspoon salt

3-4 tablespoon chocolate chips or chocolate bar, not milk chocolate

Instructions

Put all the ingredients together in the food processor and blend. Save a few of the chocolate chips to add post-blending, if desired.

Once blended, roll dough into balls and place in mini cupcake cups, or put them on a plate and add shredded coconut or chocolate chips for garnish.

Makes about 12.
